Competition Format
Competitors must develop a unique recipe based on the featured protein. Young Chef Candidates must select an assistant to train and compete with, and will have 2 hours and 35 minutes to cook and plate 10 tasting size portions of the dish; Commis candidates will have 90 minutes. All competitors will be paired with mentors from the Foundation’s Culinary Council or previous Bocuse d’Or Team USA representatives, to provide guidance during their training. A panel of renowned chefs drawn from the Foundation's Culinary Council will serve as jury members at the competition. Judges will evaluate each team's/candidate's preparation of the selected protein, which will be announced upon selection of the finalists. Candidates will be evaluated on excellence in overall taste, presentation and kitchen organization.
Prizes
Winners will have the choice of a cash prize or the opportunity to stage with Team USA. (please note that ment'or may issue IRS forms to prize winner if required by law).
